The Best Pineapple Bake
INGREDIENTS:
1 fresh pineapple, peeled, cored, and diced into bite-sized pieces
1 cup granulated sugar
1/2 cup unsalted butter, melted
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1/2 cup shredded coconut
Vanilla ice cream or whipped cream (optional, for serving)
DIRECTIONS:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick cooking spray.
In a medium bowl, toss the diced pineapple with 1/4 cup of granulated sugar. Allow the pineapple to sit for about 10 minutes to macerate, releasing its juices and enhancing its natural sweetness.
Meanwhile, in a separate large mixing bowl, combine the melted butter and remaining 3/4 cup of granulated sugar. Stir until well combined.
In another bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the butter and sugar mixture, alternating with the milk. Stir until smooth and well incorporated.
