TEX-MEX MEATLOAF
INGREDIENTS:
For the meatloaf:
1 ½ pounds ground beef (preferably 80/20 lean to fat ratio)
1 cup breadcrumbs
1 onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, finely diced
1 jalapeño pepper, seeded and minced (adjust to taste)
1 can (4 oz) diced green chilies, drained
1 cup corn kernels (fresh, canned, or frozen)
1 cup shredded Mexican blend cheese
2 eggs
1/4 cup chopped fresh cilantro
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
For the glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce (optional)
DIRECTIONS:
Preheat oven: Preheat your oven to 350°F (175°C).
Prepare the meat mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, diced red bell pepper, minced jalapeño, diced green chilies, corn kernels, shredded cheese, eggs, chopped cilantro, chili powder, cumin, smoked paprika, salt, and pepper. Mix everything together until well combined. It’s best to use your hands for this to ensure even distribution of ingredients.
Shape the meatloaf: Transfer the meat mixture onto a baking sheet lined with parchment paper. Form the mixture into a loaf shape, making sure it’s evenly shaped and compacted.
