Stuffed Salmon
If you are looking for a simple and flavorsome dish that combines a side dish and main dish in one, look no further than this homemade stuffed salmon recipe. It is simple to prepare and calls for some other seafood favorites such as crab meat and shrimp. The preparation is simple and cooks quickly right in your oven.
INGREDIENTS:
2 – 6 oz salmon fillets
1 – 6 oz can of crab meat, drained
1 – 8 oz bag small cooked shrimp, peeled and deveined
¼ C Mayo
¼ C shredded parmesan cheese
2 tbsp fresh lemon juice
2 tbsp green onions, chopped
1/2 C Italian bread crumbs
Cajun Seasoning to season the Salmon
DIRECTIONS:
Preheat oven and spray a cookie sheet with pam cooking spray
Cut a slit through the middle of each salmon fillet and season the whole salmon with cajun seasoning
In a large bowl, mix the crab meat, shrimp, mayo, parmesan cheese, lemon juice, green onions and ¼ C bread crumbs until combined
Stuff the center of each salmon using the crab and shrimp mixture
Top with 3 tbsp of the bread crumbs
Bake in the oven for 30 minutes or until the salmon starts to flake with a fork
Remove and sprinkle fresh parsley on top
Serve and enjoy!
