Stuffed Pepper Skillet
This Stuffed Pepper Skillet Recipe is a delicious and easy way to get your family to enjoy a healthy, balanced meal. It combines fresh bell peppers with ground beef and a savory combination of spices and herbs to create a flavorful dish that is sure to please everyone.
INGREDIENTS:
2 Tbsp. Tomato paste
½ Onion, chopped
1 ½ C. Monterey jack cheese , shredded
2 Green bell peppers , chopped
1 lb. Ground beef
2 tsp. Minced garlic
¾ C. Uncooked long grain white rice
2 C. Beef broth
14 oz. Diced tomatoes undrained, I used 14oz can
Salt and pepper to taste
DIRECTIONS:
Place the ground beef, onions and peppers in a large high sided skillet over medium high heat.
Saute until the meat is browned and the vegetables have softened. Drain any excess grease.
Add in the garlic, and saute another minute.
Mix in the rice, broth, tomatoes and salt and pepper to taste.
Allow the mixture to come to a boil, reduce the heat to medium low, cover and simmer for 20 minutes or until the rice is cooked through.
Top with the cheese, cover and allow the cheese to melt before serving.
