Spinach Garlic Meatballs Stuffed With Mozzarell
INGREDIENTS:
For the Meatballs:
1 pound ground beef (or a mix of beef and pork)
1 cup fresh spinach, finely chopped
4 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1 tablespoon fresh parsley, chopped
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
8 ounces mozzarella cheese, cut into 1/2-inch cubes
For Serving:
Marinara sauce
Fresh basil, chopped (optional)
Grated Parmesan cheese (optional)
DIRECTIONS:
Preparing the Meatballs
Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Mix Ingredients: In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, grated Parmesan, egg, parsley, oregano, salt, and pepper. Mix until all ingredients are well incorporated.
Form the Meatballs: Take a small portion of the meat mixture (about 2 tablespoons) and flatten it in your palm. Place a cube of mozzarella in the center, then fold the meat around the cheese, rolling it into a ball. Make sure the cheese is fully enclosed. Repeat with the remaining meat mixture and cheese cubes.
Bake the Meatballs: Place the meatballs on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until the meatballs are browned and cooked through.
Serving Suggestions
Serve with Sauce: Serve the meatballs hot, topped with marinara sauce. Sprinkle with fresh basil and extra Parmesan cheese if desired.
Pairing Ideas: These meatballs are delicious over a bed of spaghetti, tucked into a meatball sub, or served alongside a fresh green salad.
