Slow Cooker Taco Soup
Taco soup is a comforting, flavorful dish that’s perfect for chilly days. This slow cooker version makes it incredibly easy to prepare and allows the flavors to meld together beautifully. Packed with beans, vegetables, and savory taco seasonings, this soup is a crowd-pleaser.
INGREDIENTS:
For the Soup:
1 pound ground beef or turkey
1 onion, diced
3 cloves garlic, minced
1 bell pepper, diced (any color you prefer)
1 can (15 ounces) black beans, drained and rinsed
1 can (15 ounces) kidney beans, drained and rinsed
1 can (15 ounces) pinto beans, drained and rinsed
1 can (15 ounces) corn kernels, drained
2 cans (14.5 ounces each) diced tomatoes
1 can (4 ounces) diced green chilies
4 cups beef or chicken broth
1 packet (1 ounce) taco seasoning mix
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro, tortilla chips

Chopped fresh cilantro
Sliced green onions
Avocado slices

DIRECTIONS:
Brown the Meat: In a skillet over medium heat, cook the ground beef (or turkey) until it’s no longer pink. Break it up into smaller pieces as it cooks. Once done, drain off excess fat.
Prepare the Slow Cooker: Transfer the cooked meat to the slow cooker. Add in the diced onion, minced garlic, and bell pepper.
Add the Beans and Veggies: Pour in the black beans, kidney beans, pinto beans, corn kernels, diced tomatoes, and green chilies.
Seasoning: Sprinkle the taco seasoning, chili powder, and cumin evenly over the ingredients in the slow cooker. Stir everything together until the seasoning is well incorporated.
Pour in the Broth: Gently pour the chicken or beef broth over the mixture in the slow cooker. Stir to combine all the ingredients.
Cooking: Cover the slow cooker with its lid and set it to cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The longer it cooks, the more the flavors will meld together.
