INGREDIENTS:

1.5 pounds of baby potatoes

4 cloves of garlic, minced

3 tablespoons of olive oil

Salt and pepper to taste

2 tablespoons of fresh parsley, chopped (optional)

1 teaspoon of dried thyme (optional)

DIRECTIONS:

Preheat your oven to 400°F (200°C).

Prepare the potatoes: Wash and dry the baby potatoes. If they are larger, cut them in half or quarters to ensure even cooking.

Mix the ingredients: In a mixing bowl, combine the potatoes, minced garlic, olive oil, salt, pepper, and dried thyme (if using). Toss until the potatoes are well-coated.

Bake the potatoes: Spread the potatoes out on a baking sheet lined with parchment paper. Ensure they are in a single layer for even roasting. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside.

Garnish and serve: Once out of the oven, sprinkle the chopped fresh parsley over the potatoes (if using). Serve hot and enjoy!
