Sausage Green Bean Potato Casserole
INGREDIENTS:
1.5 pounds kielbasa or smoked sausage sliced
2 15-ounce cans green beans, well-drained
2 pounds baby creamer potatoes cleansed and halved
1 cup chopped onions
⅛ cup vegetable oil
¼ cup butter
3 cloves garlic minced
1 teaspoon garlic powder
1 teaspoon black pepper
Optional: 1 teaspoon Slap Ya Mama seasoning
DIRECTIONS:
Preheat oven to 400°F (200°C) and grease a 9×13-inch casserole dish.
Place halved creamer potatoes in a gallon-sized sealable bag. Add vegetable oil, garlic powder, black pepper, and Slap Ya Mama seasoning (if using). Seal and shake to coat evenly.
In a large skillet, heat oil over medium heat. Brown the sausage slices, then remove and set aside to cool before adding them to the bag with potatoes.
In the same skillet, melt butter and sauté onions and garlic until soft and fragrant. Let cool and add to the bag.
Add drained green beans to the bag, seal, and shake gently to combine.
Transfer the mixture from the bag into the prepared casserole dish. Cover with aluminum foil and bake for about 40 minutes, or until potatoes are tender.
NOTES
Pair with a crisp green salad, warm crusty bread, or a side of roasted vegetables for a complete meal.
