INGREDIENTS:

4 cups frozen pineapple chunks

1 can (14 oz) coconut milk, chilled

1 tablespoon honey or maple syrup (optional, for added sweetness)

1 teaspoon vanilla extract (optional, for enhanced flavor)

DIRECTIONS:

In a blender or food processor, combine the frozen pineapple chunks, chilled coconut milk, honey or maple syrup (if using), and vanilla extract (if using).

Blend until smooth and creamy, scraping down the sides of the blender or food processor as needed to ensure everything is well combined.

Serve immediately for a soft serve consistency, or transfer the mixture to a container and freeze for 1-2 hours for a firmer texture.
