PEACH COBBLER EGG ROLLS
This unusual recipe combines crunchy egg roll wrappers with a peach cobbler filling. It’s deliciously different and so tasty. It’s also perfect for a special occasion. Oh, and they’re easy to make.

INGREDIENTS:

2 cups chopped peaches

2 tablespoons salted butter

1 tablespoon lemon juice

4 teaspoons cornstarch

½ cup light brown sugar

½ teaspoon vanilla extract

½ teaspoon cinnamon

10 egg roll wrappers

FOR THE VANILLA DIPPING SAUCE:

 tablespoons milk

¾ cup powdered sugar

½ teaspoon vanilla bean paste

DIRECTIONS:

Bring the peaches, butter, lemon juice, brown sugar, cinnamon, and cornstarch to a boil in a pan.
Turn the heat down and simmer, stirring every now and then.
After about 10 minutes or when it’s thick, mix in the vanilla, then let the mixture cool.
Put an egg roll wrapper down in a diamond shape.
Moisten the edges with water.
Put 2 tablespoons of the peach mixture in the middle.
Fold the sides in as you roll it up and press the edges to seal.
Repeat with the remaining egg roll wrappers and peach filling …
