Paula Dean’s Pumpkin Bars

INGREDIENTS:

For the bars:

2 C. All-purpose flour
3 tsp. Baking powder
1 tsp. Baking soda
2 tsp. Cinnamon
15 oz. Can pumpkin puree
1 C. Oil
1 ¾ C. Granulated sugar
4 large eggs

For the frosting:

½ C. Butter unsalted and softened
8 oz. Cream cheese softened
2 C. Confectioners sugar
1 tsp. Vanilla extract

DIRECTIONS:

Preheat the oven to 350 degrees.
In a mixing bowl, blend the pumpkin puree, eggs, oil, and sugar until well blended.
Add the flour, baking powder, baking soda, and cinnamon to the mixing bowl and beat until smooth.
Pour the batter into a well-greased 9×13 baking dish and bake for 40 minutes.
Remove the bars from the oven and allow to cool to room temperature …
