One Pot Chicken Parmesan Pasta
This chicken parmesan pasta is the perfect one pot meal for busy weeknights. It’s flavorful and can be on the table in less than 30 minutes. Plus, it’s a great way to use any leftover chicken parmesan. This chicken parmesan pasta is sure to become a family favorite.

INGREDIENTS:

tablespoon Olive oil
Onionmedium, diced
pound Chicken breastsboneless, skinless, (approximately 2 large breasts), cut into 1 inch cubes
2 teaspoons Minced garlic
oz Dry penne pasta
cups Marinara sauce
1 ½ cups Chicken broth
2 teaspoons Dried oregano
½ cup Parmesan cheeseshredded
1 ½ cups Mozzarella cheeseshredded
Salt and pepper (for seasoning)

DIRECTIONS:

Heat olive oil in a large skillet over medium-high heat. Saute onions until they start to turn translucent, about 2-3 minutes.
Season chicken with salt and pepper and add to the skillet. Brown chicken until mostly cooked through, about 4-5 minutes. Add garlic and saute until fragrant, about 1 minute.
Add dry pasta, marinara sauce, chicken broth and oregano. Stir until ingredients are well combined in the skillet. Cover the skillet and reduce to a simmer. Cook for 25-30 minutes, stirring a few times until pasta is cooked and the liquid has reduced to a sauce consistency …
