One Pot Black Pepper Chicken

INGREDIENTS:
1 lbs Chicken Breasts, Boneless-skinless / Cubed
1 Red Bell Pepper, seeded and cut into strips
1 tsp Black Pepper, Cracked
1- inch Ginger Root, Peeled and chopped
2 cloves Garlic, Peeled and minced
3 tbsp Soy Sauce
3 tbsp White Vinegar
1 tbsp Honey
2 tbsp Olive Oil
DIRECTIONS:
In a medium-sized bowl whisk together half of the soy sauce (1 ½ tbsp), half of the vinegar (1 ½ tbsp), and the honey.
Add the cubed chicken to the sauce and toss to coat. Marinate inside the refrigerator for at least 30 minutes.
In a large skillet add olive oil and heat to medium-low. Add the garlic and ginger and cook for 30 seconds or until garlic is golden. Mix together and make sure not to burn the garlic and ginger mixture.
Add the marinated chicken with the sauce and cook for 3 minutes.
One chicken is cooked, add the bell pepper strips along with the remaining soy sauce, vinegar and black pepper. Stir and cook for 10 minutes until pepper shave softened.
To serve, spoon chicken over or alongside brown rice or quinoa.
