These bars aren’t exactly health food, but they’re certainly better than all those Christmas sweets and trifles. They have a great crunch from the oats, and the chocolate drizzle adds just the right amount of sweetness. What’s better? They’re super easy to prepare. All you have to do is combine the ingredients, place them in the refrigerator to cool, take out when chilled and enjoy!

INGREDIENTS:

1 cup butter

½ cup brown sugar packed

1 tsp vanilla extract

3 cups quick cooking oats

1 cup semisweet chocolate chips

½ cup peanut butter

Chocolate chips for drizzle

DIRECTIONS:

Step 1:Grease a pan and set aside, melt butter in a medium pour and add in brown sugar and vanilla to it, add oats and allow to cook on low for a few minutes. Then pour half of this mixture into the greased pan and use a spatula to press down. Leave it aside.

Step 2:Melt chocolate chips and peanut butter in another pot on low, and stir until it is smooth and pour over the bottom of the oat layer. Then crumble the remaining oat mixture over the chocolate layer, gently pressing in.

Step 3:Melt the chocolate chips to spray over the top. Allow to refrigerate for a few hours. Remove and bring bars to cool in room temperature before cutting. Serve and enjoy!

Tips and variations:

• You can either use quick cooking oats or rolled/old fashioned oats. Quick oats are the most processed of all the oat types and also take the shortest amount of time to cook. The other needs extra time to soften.

• Allow the layer sit before building, this is because the oats needs to be a part of the chocolate layer.
