INGREDIENTS:

3 ½ C. All-purpose flour
 C. Granulated sugar
2 C. Packed brown sugar
1 C. Vegetable oil
2 C. Pumpkin puree
2 tsp. Baking soda
 C. Coconut milk
1 tsp. Nutmeg
1 tsp. Salt
1 ½ tsp. Cinnamon
1 C. Chopped walnuts
 C. Coconut flakes

DIRECTIONS:

Preheat the oven to 350 degrees.
Mix together all of the ingredients except for the walnuts and coconut in a mixing bowl until well combined.
Fold in the walnuts and coconut flakes.
Pour the batter evenly into two well-greased loaf pans.
Bake for 1 hour and 15 minutes.
Cover with tin foil immediately after removing from the oven for 10 minutes, then remove and let cool to room temperature before serving.
