Mandarin Cupcakes
These Mandarin cupcakes are simple, delicious, and perfect for any occasion. Be sure to give them a try the next time you want something sweet and special.
INGREDIENTS:
130 gms Refined flour
1 tsp Baking powder
1/4 tsp Salt
115 grams Butter, melted
1/4 cup Milk, room temperature
2 Eggs
2 tbsp Orange juice
1/2 large mandarin, Zest
150 gms Sugar powdered
2 tsp Curd
2 tsp Honey
1 tsp Vanilla extract
Butter Cream Frosting Ingredients
1 cup Butter
2 cups Powdered sugar
1 tsp Vanilla extract
DIRECTIONS:
In a bowl mix the wet ingredients together. Add the butter and sugar and mix till it changes color. Add the eggs one at a time. Add curd, vanilla extract, honey & mix well.
Sift the dry ingredients together (refined flour, salt, baking powder). Add the zest and mix.
Start adding the dry mix to the wet mix, alternating it with milk.
Lastly, add the orange juice and give it one final mix.
Bake at 180°C for 18-20 mins or till a toothpick comes out clean.
Butter Cream Frosting method:
Beat the butter for 4-5 mins at high speed till it becomes light and creamy. Add the vanilla extract and mix.
Slowly start adding the sugar little at a time and beat till you get desired consistency. (It should hold shape)
