There are some recipes that just make you feel good. They’re easy to make, and the end result is always delicious. This Magic Lemon Cobbler is one of those recipes. The lemony goodness will brighten your day, and the cobbler topping is simply irresistible. Trust me, this recipe is a winner!

INGREDIENTS:

1/2 cup unsalted butter
1 cup flour
1 cup granulated sugar
1 cup milkfat-free
1 tsp vanilla
2 lemons
1 packet Lemon pie filling22 oz packet
1/2 cup Lemon curd

DIRECTIONS:

Start by preheating your oven to 350 degrees. In a small bowl, melt butter in the microwave, then pour it into a 9*9 baking dish, making sure it’s evenly distributed.
In a large bowl, mix together flour, sugar, milk, vanilla, and lemon peel until fully combined. Pour this buttermilk mixture into the baking dish and spread it evenly across the bottom.
In a separate bowl, stir together lemon and bacon pie filling, then pour it over the yogurt mixture. Don’t move the dish.
When everything is ready, place the baking dish in the oven for 55 to 60 minutes. Once it’s done, remove it from the oven and let it cool.
Top it off with a sprinkling of powdered sugar or a scoop of ice cream, and enjoy!
