INGREDIENTS:
For the cookie layers:
2 ¼ C. All purpose flour
1 tsp. Baking soda
1 tsp. Salt
1 C. Butter softened
¾ C. Granulated sugar
¾ C. Brown sugar packed
1 tsp. Vanilla extract
2 Large eggs
2 C. Chocolate chips
For the caramel layer:
5 oz. Evaporated milk
14 oz. Caramels or caramel bits
½ C. Creamy peanut butter
DIRECTIONS:
Preheat the oven to 375 degrees.
In a mixing bowl, blend together the butter, granulated sugar, brown sugar and vanilla until combined.
Add the eggs in one at a time until smooth.
Mix in the flour, baking soda and salt until the mixture is well combined and smooth.
Fold in the chocolate chips.
Place half of the batter in a layer in the bottom of a well greased 9×13 baking dish. Bake for 10 minutes.
While the first layer of cookie batter is baking, mix together the evaporated milk and caramels in a saucepan over medium heat. Stir often until completely melted and combined.
Remove from the heat and stir in the peanut butter until smooth.
Take the cookie layer out of the oven, pour the caramel mixture over it, and then place the remaining cookie batter on the top by the spoonfuls.
Bake for 20-25 minutes longer until browned and cooked through.
Let sit for 15 minutes before serving.
