Kentucky Derby Pie
Most Kentucky Derby pie lovers will answer that it has been a staple in a Kentuckian’s diet for nearly 60 years. Having a piece of pie is part of the day’s festivities. Not surprisingly, the recipe has been handed down for several generations.
INGREDIENTS:
2 large eggs slightly beaten
1 cup sugar
1/2 cup Gold Medal UNBLEACHED all-purpose flour Bleached flour toughens baked goods
1 cup chocolate chips I prefer semi-sweet chocolate chips over milk-chocolate chips
1 cup Fisher pecans full halves are best
1 stick Land ‘O Lakes unsalted butter melted and cooled, 1/2 cup
1 tsp. McCormick pure vanilla extract
1 unbaked pie shell
DIRECTIONS:
Melt butter in microwave, then cool for about 10-15 minutes. Make sure that the butter is no longer warm to the touch for the next steps.
In a medium bowl, add the butter, sugar, eggs, flour and vanilla.
Mix all the ingredients together until smooth.
Add pecans and stir until coated.
Add chocolate chips and stir well until coated. Make sure that the mixture is not warm, otherwise they will melt and the pie will not turn out right.
Pour the mixture into the unbaked pie shell.
Place the pie into the oven and bake at 350° F / 175° C for about 40-45 minutes until set.
