Ground Beef Stuffed Pepper Skillet

INGREDIENTS:

1 ½ pounds lean ground beef80/20
1 oniondiced
1 tbsp. minced garlic
3 green bell peppersdiced
1 can fire roasted tomatoes
3/4 cup white rice
2 cups beef broth
2 Tbsp. tomato paste
1 tsp. Italian seasoning
1 Tsp. Smoked paprika
1/2 tsp. salt
1/4 tsp. black pepper
1 1/2 cups cheese

DIRECTIONS:

In a large skillet add your ground beef, diced onions, and minced garlic.
Toss to combine.
Cook on medium heat until the meat is brown and the onions are translucent.
Once cooked, drain your ground beef of any excess grease.
Add the bell peppers, beef broth, can of fire-roasted tomatoes, rice, Italian seasoning, smoked paprika, tomato paste, salt, and pepper.
Toss until combined.
Cook on medium for 5-7 minutes, stirring often.
Turn the heat down to low.
Cover the skillet and simmer on low for 18 minutes.
Add cheese to the skillet on top of the pepper mixture.
Cover the skillet and allow the cheese to melt.
