A gourmet twist on the classic grilled cheese sandwich, featuring gooey gouda cheese, perfectly roasted mushrooms, and sweet caramelized onions. This recipe delivers a savory and comforting sandwich with a rich, earthy flavor.

INGREDIENTS:

8 ounces mushrooms sliced

1 medium onion sliced

2 tablespoons olive oil

Salt and pepper to taste

4 tablespoons butter

4 slices bread of choice

1 cup gouda shredded

DIRECTIONS:

Preheat oven: Preheat the oven to 400°F (200°C).
Roast mushrooms and onions: On a baking sheet, toss sliced mushrooms and onion with olive oil. Sprinkle with salt and pepper. Roast in the oven for about 20 minutes or until they are caramelized and golden.
Prepare the skillet: Melt 4 tablespoons of butter in a skillet over medium heat.
Assemble sandwiches: On one slice of bread, layer half of the shredded gouda, then add the roasted mushrooms and onions, and top with the remaining gouda. Season with salt and pepper, then top with another slice of bread. Lightly press the sandwich together.
Cook the sandwiches: Place each sandwich in the melted butter for one second, then flip to coat the other side. Cook for about 2 minutes until lightly browned, then gently flip and cook for an additional 2-3 minutes, or until the cheese is melted and the bread is golden brown.
Serve: Slice in half and enjoy immediately!
