Greek Style Roasted Lemon Butter Potatoes
This lemon butter potatoes recipe is perfect for a quick and easy side dish that your whole family will love. The garlic and lemon give the potatoes a flavorful boost, while the butter adds a delicious richness.
INGREDIENTS:
3 lbs. Baby golden potatoes cut in half lengthwise
¼ C. Butter melted
⅔ C. Chicken broth
1 Tbsp. Lemon juice
1 tsp. Oregano
½ tsp. Rosemary
3 tsp. Minced garlic
½ C. Parmesan cheese grated
Salt and pepper to taste
DIRECTIONS:
Preheat the oven to 375 degrees.
Pour the butter into a 9×13 baking dish and add the sliced potatoes on top of it.
In a bowl, combine the chicken broth, lemon juice, rosemary, oregano, minced garlic and salt and pepper to taste.
Pour the mixture over the potatoes, and toss to coat completely.
Cover the baking dish with tin foil and bake for 40 minutes.
Remove the foil, sprinkle on the parmesan cheese and bake for another 30 minutes or until done to your liking.
