Garlic Butter Steak and Potato Foil Packets

INGREDIENTS:

1 pound baby potatoes in ½-inch chunks

1½ pounds sirloin steak

1 peeled, halved and sliced onion

2 tablespoons chopped fresh parsley

1 tablespoon olive oil

1 tablespoon Italian seasoning

1 tablespoon minced garlic

2 tablespoons chopped butter

Salt and black pepper, to taste

DIRECTIONS:

Boil the potatoes for 5 minutes, then drain and then them cool down.

Cut the steak into 5-inch pieces for rare, 3 to 4-inch pieces for medium or 2½ to 3-inch pieces for well done.

Toss the meat, potatoes, onion, parsley, oil, garlic, and seasonings in a large bowl.

Divide this mixture between 4 squares of foil that are about 12 inches long.

Top with butter cubes, fold the foil over and seal well.

Cook for 8 to 10 minutes per side on a hot grill or over a hot campfire. If there’s no grilling rack, put the packets on a 2-inch pile of coals.

If you prefer, bake them in a 425 degrees F oven. When the steak is cooked to your liking and the potatoes are tender, they’re done.

Open the packets (carefully! There will be steam) and serve hot.
