Fried Potatoes Onions and Smoke Polish Sausage

INGREDIENTS:

2 Onions large, cut into wedges
1 lb Cajun smoked sausage
2 lb Baby red potatoes sliced in half
1 lb Smoked turkey sausage
1 tsp Paprika
1 tbsp Cajun seasoning
2 tbsp Olive oil
Salt and pepper to taste

DIRECTIONS:

Cut the sausage into slices.
Add the meat, potatoes and onions to a large mixing bowl.
Pour the olive oil over the mixture, and season with the cajun spice, paprika, as well as salt and pepper to taste. Toss to coat well.
Spread the mixture into a single layer on a parchment lined baking sheet.
Bake for 45 minutes, or until the potatoes are tender.
