Fresh Peach Cobbler
INGREDIENTS:
6 large ripe peaches, peeled and sliced
1 cup all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1/4 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon (optional)
Vanilla ice cream, for serving (optional)
DIRECTIONS:
Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
In a large bowl, combine the sliced peaches, granulated sugar, and vanilla extract. Toss until the peaches are evenly coated.
In another bowl, mix together the flour, baking powder, salt, and cinnamon (if using).
Gradually add the melted butter to the dry ingredients, stirring until the mixture resembles coarse crumbs.
Spread the peach mixture evenly into the prepared baking dish. Sprinkle the brown sugar over the top.
