1 pound of ground beef
1/2 diced yellow onion
2 packages (16 ounces each) of sturdy tortilla chips
1 can of refried beans
16 ounces of shredded cheese (preferably a mix of cheddar and Monterey Jack)
3 diced Roma tomatoes
2 to 3 sliced green onions
DIRECTIONS:
Begin by preheating your oven to 400 degrees Fahrenheit.
On the stovetop, use a skillet to brown the ground beef with the diced onion over medium-high heat. This should take approximately 8 minutes. Once fully cooked, drain any excess fat from the skillet.
Return the drained beef and onions to the pan. Evenly sprinkle the taco seasoning over the beef. Stir in 3/4 cup of water, then bring the mixture to a simmer. Reduce the heat and let it simmer until most of the liquid evaporates, which should take about 5 minutes.
As the beef cooks, prepare two baking sheets by lining them with parchment paper. Spread a generous layer of tortilla chips on each sheet.
Dollop refried beans onto the chips, distributing half of the can to each sheet. Place spoonfuls of beans across the chips; they will spread out as they heat in the oven.
Divide the seasoned ground beef mixture between the two trays of chips.
Top the beef and chips with the shredded cheese.
