Easy Taco Casserole

INGREDIENTS:

1 pound extra lean ground turkey or chicken

1 packet reduced-sodium taco seasoning

1 cup salsa

1 cup reduced-fat shredded cheddar cheese

1 cup non-fat Greek yogurt or light sour cream

1 cup diced tomatoes

1 cup diced bell peppers

1 cup diced onions

1 cup canned black beans, drained and rinsed

1 cup frozen corn kernels

Cooking spray

Optional toppings: sliced green onions, chopped cilantro, sliced jalapenos, avocado slices

DIRECTIONS:

Preheat your oven to 350°F (175°C). Lightly coat a 9×13-inch baking dish with cooking spray.

In a large skillet, cook the ground turkey or chicken over medium heat until it’s no longer pink, breaking it up with a spoon as it cooks.

Stir in the taco seasoning and cook for an additional 2-3 minutes.

Spread the cooked meat mixture evenly into the prepared baking dish.

In a large bowl, combine the salsa, diced tomatoes, bell peppers, onions, black beans, and corn. Mix well to combine.

Spread the vegetable mixture evenly over the cooked meat in the baking dish.

Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let it cool for a few minutes before serving.

Serve the taco casserole with a dollop of non-fat Greek yogurt or light sour cream on top, along with your favorite optional toppings.
