EASY CHICKEN WITH MUSHROOM GRAVY

INGREDIENTS:
Grated Parmesan cheese
1 Onion sliced
1 Packet Italian dressing mix
4 Boneless skinless chicken breasts
8 oz. Mushrooms sliced
1 ½ C. Mozzarella cheese shredded
Salt and pepper to taste
8 oz. Cream cheese softened
8 oz. Fresh raw spinach
DIRECTIONS:
Heat some oil in an oven-proof skillet over medium heat.
Stir in the onions and mushrooms, and saute until becoming tender.
Blend together the cream cheese and Italian dressing mix in a bowl.
Place the chicken into the skillet, and spread the cream cheese mixture over it.
Top the skillet with the spinach, and then sprinkle with mozzarella, parmesan and salt and pepper to taste.
Bake for 30 minutes, and garnish with more parmesan cheese before serving.
