Cucumber Avocado Salad
INGREDIENTS:
2 avocados cubed
2 tablespoons fresh lemon juice from ½ lemon
1 English cucumber washed and diced
2 tablespoons red onion diced
¼ cup fresh dill
Dressing:
1 tablespoon sugar
1 ½ tablespoons red wine vinegar
¼ cup olive oil
Seasoning salt & pepper to taste
DIRECTIONS:
Step1: Gently mix together avocado and lemon juice in a medium bowl.
Step2: Add all remaining ingredients and gently toss to combine.
Step3: Refrigerate 20 minutes before serving.
