Cucumber and Tomato Salad

INGREDIENTS:
1 lb. Baby cucumbers sliced
1 Pint cherry tomatoes cut in half
1 Small onion thinly sliced
½ C. Shredded Parmesan cheese
For the dressing:
½ C. Balsamic vinegar
⅓ C. Olive oil
1 tsp. Italian seasoning
¼ C. Sugar
1 tsp. Minced garlic
Pepper to taste
DIRECTIONS:
In a large bowl, toss together the cucumbers, tomatoes and onions.
In a smaller bowl, whisk together the ingredients for the dressing.
Pour the dressing over the vegetables and toss to coat well.
Stir in the shredded parmesan and chill before serving if desired.
