Crunchy Salsa with Fresh Cucumbers
This Crunchy Salsa with Fresh Cucumbers is the perfect summertime dish – fresh, light, and full of flavor. It’s perfect for picnics, barbecues, or just to enjoy as a healthy snack.
INGREDIENTS:
For the sauce:
¼ cup Sour cream
1 ½ tsp Lemon juice
1 ½ tsp Lime juice
¼ tsp Cumin
¼ tsp salt, Seasoned
For the salsa:
¼ C Red onion, chopped finely
2 tbsp Parsley , Fresh chopped
1 tbsp Cilantro, Fresh chopped
½ c Tomatoes , chopped and deseeded
2 c Cucumber , chopped
1 Jalapeno pepper , deseeded and chopped finely
1 tsp garlic, Minced
DIRECTIONS:
Blend together the ingredients for the sauce in a small bowl.
In a larger mixing bowl, mix together the ingredients for the salsa.
Pour the sauce mixture over the salsa, and toss to coat well.
Chill for 1-2 hours, and serve with chips, or as a topping on your favorite dish.
