Crockpot Bourbon Chicken
INGREDIENTS:
2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 cup bourbon
1/2 cup soy sauce
1/3 cup brown sugar
1/4 cup ketchup
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
1/4 teaspoon crushed red pepper flakes (adjust to taste)
2 tablespoons cornstarch
2 tablespoons water
Optional: sliced green onions and sesame seeds for garnish
DIRECTIONS:
In a bowl, mix together bourbon, soy sauce, brown sugar, ketchup, garlic, ginger, and red pepper flakes.
Place the chicken pieces in the crockpot and pour the sauce over them, ensuring the chicken is evenly coated.
Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
In a small bowl, mix cornstarch and water to create a slurry. Stir the slurry into the crockpot during the last 30 minutes of cooking to thicken the sauce.
Once the chicken is cooked and the sauce has thickened, serve hot, garnished with sliced green onions and sesame seeds if desired.
