CRISPY CRUNCHY PARMESAN POTATOES
If you like roasted potatoes as much as I do, this recipe is sure to make you super happy. These Crispy Crunchy Parmesan Potatoes come out of the oven crispy on the outside and moist and flaky on the inside. There is a crunchy layer of Parmesan that you bite into that makes your mouth water for more.

INGREDIENTS:

1 ½ – 2 lbs. Petite red potatoes cut half
2-3 Tbsp. Olive oil
½ C. Parmesan cheese
½ tsp. Garlic powder
½ tsp. Onion powder
½ tsp. Paprika
½ tsp. Italian seasoning
Salt and pepper to taste

DIRECTIONS:

Preheat the oven to 400 degrees.
Greased the bottom of a 9×13 baking dish with olive oil.
In a bowl, combine the parmesan cheese, seasoning and salt and pepper to taste.
Layer the parmesan mixture into the bottom of the baking dish in an even layer.
Press the potatoes cut side down into the parmesan mixture.
Bake for 40 minutes until tender.
Remove the potatoes from the baking dish, cutting the parmesan crust between potatoes.
Serve with sour cream for dipping if desired.
