Creamy Italian Sausage and Potato Soup

INGREDIENTS:
1 lb Italian Sausage, Ground
2 lb Baby Gold Potatoes, Cut into fourths
3 cup Spinach, Raw
6 cup Chicken Broth
1 cup Heavy Whipping Cream
½ cup Parmesan Cheese, Grated
2 tsp Garlic, Minced
Salt and pepper to taste
DIRECTIONS:
Place the ground beef into a pot, and saute until completely cooked through.
Add the garlic to the pot and saute for 30 seconds. Drain the excess fat.
Add the chicken broth to the pot, and bring to a boil.
Place the potatoes into the pot, and simmer on medium low heat for 10-12 minutes until the potatoes are softened.
Mix in the spinach until wilted.
Stir in the heavy whipping cream and parmesan cheese. Simmer for another 10 minutes before serving.
