CREAMY GARLIC SHRIMP
INGREDIENTS:
1 pound large shrimp, peeled and deveined
4 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (optional)
Lemon wedges (for serving, optional)
DIRECTIONS:
Prepare the shrimp: Pat the shrimp dry with paper towels and season with salt and pepper.
Cook the shrimp: In a large skillet, heat the olive oil and butter over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
Prepare the garlic: In the same skillet, add the minced garlic and sauté for about 1 minute, or until fragrant.
Make the sauce: Add the chicken broth to the skillet and bring to a simmer. Stir in the heavy cream and Parmesan cheese, and continue to simmer for 2-3 minutes, or until the sauce thickens.
Combine and serve: Return the cooked shrimp to the skillet and toss to coat in the creamy garlic sauce. Cook for an additional 2 minutes, or until the shrimp are heated through. Garnish with chopped parsley and serve with lemon wedges, if desired.
