Crack and Cheese
There’s something about a good bowl of mac and cheese that just makes everyone happy. But what if you could make it even better? by adding a secret ingredient – crack!
INGREDIENTS:
2 ½ C elbow macaroni
6 tbsp unsalted sweet cream butter
¼ C flour
2 C whole milk
4 C cheddar cheese plus 1 C for topping
⅔ C cream cheese
1 ⅓ C cottage cheese
1 large tomato diced
DIRECTIONS:
Preheat oven to 350 degrees
Follow the back of the elbow macaroni box to boil the macaroni
Once the macaroni has been cooked and drained, set aside
Using a large saucepan, melt the butter
Once the butter is melted, whisk in the flour
Once the flour and butter is combined, whisk in the milk until combined
Continue to whisk until thick
Whisk in the cheese, cream cheese, and cottage cheese until combined
Remove from stove
Gently fold in the macaroni into the cheese mixture
Fold in half of the diced tomato
Once coated, scoop the mac and cheese into a 9×13 baking dish
Sprinkle 1 C of the cheddar cheese on top and remaining tomatoes
Bake in the oven for 30 minutes or until the cheese is a golden brown and melted
Remove and serve!
