CRAB BOIL PLATTER WITH EXTRA CORN

INGREDIENTS:

4 lbs of crab legs (snow crab, king crab, or a mix)

8 ears of corn, shucked and halved

1 lb of small red potatoes, halved

1 lb of andouille sausage, sliced into 1-inch pieces

4 lemons, halved

2 large onions, quartered

8 garlic cloves, smashed

1/2 cup of Old Bay seasoning

1/4 cup of Cajun seasoning

2 bay leaves

4 tablespoons of butter

4 tablespoons of olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

DIRECTIONS:

Preparation:

Fill a large stockpot with water, leaving enough room to add the ingredients later. Add the Old Bay seasoning, Cajun seasoning, bay leaves, and a pinch of salt to the water. Bring to a rolling boil.

Cooking the Corn and Potatoes:

Add the potatoes to the boiling water and cook for about 10 minutes. Then add the corn and cook for another 5 minutes, or until both the potatoes and corn are tender. Remove the corn and potatoes with a slotted spoon and set aside.
