Copycat Taco Bell Pizza
Nobody ever gets tired of pizza recipes but sometimes it’s nice to enjoy something a bit different. This Mexican style pizza recipe is really easy to make and you can get a Taco Bell style result without having to leave the house. Something else that’s great about this is you can tailor it to your palate, making it hot and spicy, adding extra cheese, changing the beef for chicken, or adding cilantro on top.
INGREDIENTS:
8 Taco size flour tortillas
1 lb. Ground beef
1 Can refried beans
1 Packet of taco seasoning mix
1 Can red enchilada sauce 10oz.
Vegetable oil
2 C. Mexican blend or cheddar cheese
Toppings:
Tomatoes chopped
Chopped green onions
DIRECTIONS:
Heat some vegetable oil in a skillet over medium heat, and toast the tortillas evenly on both sides until crispy.
Place 4 of the tortillas on a parchment lined or well greased baking sheet.
Top each of the 4 tortillas with the refried beans.
Brown the ground beef in a skillet over medium high heat until completely cooked through. Drain the excess grease.
Sprinkle the taco seasoning over the ground beef, and stir to combine well.
Spread a layer of the meat over the refried beans on the tortillas.
Place another crispy tortilla on top of each of the topped ones.
Spread a layer of enchilada sauce on top of each Mexican pizza, and top each pizza with a the cheese.
Bake for 10 minutes, or until the cheese has melted.
Remove, and top with the tomatoes and green onions before serving.
