Copycat Starbucks Lemon Loaf
INGREDIENTS:
4 sticks Butter, unsalted and melted
1 ½ c All-purpose flour
2 tsp Vanilla
2 tsp Baking powder
1 ½ c Cake flour
½ c Sour cream , at room temperature
¼ tsp Baking soda
¼ c Lemon zest
2 tsp Lemon extract
2 ½ c Granulated sugar
8 Eggs, Large
1 tsp Salt
For the lemon glaze:
2 c Powdered sugar
5 tbsp Lemon juice
For the lemon syrup:
⅓ c Granulated sugar
⅓ c Lemon juice, Fresh
DIRECTIONS:
Heat the oven to 350 degrees.
Mix together the flours, salt, baking powder and baking soda in a bowl.
Blend together the eggs, lemon extract and lemon zest in a separate bowl.
Mix the butter, sour cream, and vanilla into the bowl with the egg mixture, and blend until smooth.
Pour the dry ingredients in, and blend until well combined. Do not overmix.
Spread the mixture evenly into two well-greased loaf pans.
Bake for 20 minutes.
Lower the heat to 325 degrees, and bake for another 30 minutes.
Remove the loaf pans from the oven and let them cool for 10 minutes
Add the syrup ingredients to a pot over medium heat, and stir for 3 minutes …
