Cheesecake Fruit Salad
INGREDIENTS:
1 package (8 oz) cream cheese, softened
1/2 cup granulated sugar (adjust to taste)
1 teaspoon vanilla extract
1 cup heavy cream or whipped topping
1/2 cup Greek yogurt (optional, for extra creaminess)
2 cups strawberries, hulled and sliced
1 cup blueberries
1 cup raspberries
1 cup blackberries
2 bananas, sliced
1 cup grapes (any color)
1 can (11 oz) mandarin oranges, drained
1/2 cup graham cracker crumbs (optional, for garnish)
Mint leaves (optional, for garnish)
DIRECTIONS:
Prepare the Cheesecake Mixture:
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Add the granulated sugar and vanilla extract, and continue beating until well combined.
If you’re using Greek yogurt, fold it into the mixture now for extra creaminess.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. This will be your cheesecake filling.
Combine with Fruit:
In a large serving bowl, gently mix the strawberries, blueberries, raspberries, blackberries, bananas, grapes, and mandarin oranges. Try to do this carefully to avoid crushing the fruit.
