Cheese Shrimp Penne Pasta and Spinach

INGREDIENTS:

1 ½ lbs. Shrimp peeled and deveined with the tails off
1 Box Penne pasta
4 C. Raw spinach
2 tsp. Minced garlic
2 Tbsp. Butter
1 Tbsp. Olive oil
1 C. Mozzarella cheese
¼ C. Parmesan cheese
Salt and pepper to taste

DIRECTIONS:

Cook the penne pasta to your liking and drain well.
Heat the olive oil in a skillet over medium high heat on the stove.
Add the shrimp to the skillet with salt and pepper to taste, and saute until the shrimp is cooked through.
Stir in the spinach and minced garlic while reducing the heat to medium. Saute until the spinach has wilted.
Pour the shrimp into a pot or serving dish with the pasta, toss in the mozzarella, butter and parmesan cheese. Stir to combine before serving.
