Cajun Shrimp Deviled Eggs
INGREDIENTS:
2-3 Tbsp Mayonnaise
12 eggs, Large
1 Tbsp Hot sauce
2 Dozen Shrimp , peeled and deveined
1 Tbsp Sweet pickle relish
1 Oil
4 tsp Old Bay seasoning , divided
½ Lemon
¼ tsp Garlic powder
2 Tbsp Dill , Fresh chopped, divided
2 tsp Dill , Fresh chopped, divided
Salt and pepper to taste
DIRECTIONS:
Cover the eggs with water in a pot, and bring to a boil. Once boiling, turn the heat off, cover the pot, and allow to sit for 15-20 minutes. Immediately add the eggs to an ice water bath, and then peel.
Slice the eggs in half lengthwise, and remove the yolks from the center.
Add the egg yolks to a mixing bowl with the mayonnaise, hot sauce, relish, 2 tsp of Old Bay, garlic powder, 2 Tbsp of the dill and salt and pepper to taste. Mix together until smooth and creamy.
Place the oil in a skillet over medium high heat, and add the shrimp.
Season with the rest of the Old Bay, and saute until cooked through.
Squeeze with lemon juice and set aside …
