Big Apple Fritters
INGREDIENTS:
For the Fritters:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
2/3 cup whole milk
2 large eggs
2 teaspoons vanilla extract
2 tablespoons unsalted butter, melted
2 large apples, peeled, cored, and diced (Granny Smith or Honeycrisp are ideal)
Vegetable oil for frying
For the Glaze:
1 1/2 cups powdered sugar
1/4 cup milk
1 teaspoon vanilla extract
DIRECTIONS:
Preparing the Fritters
Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter until well combined.
Create the Batter: Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the diced apples.
Heat the Oil: In a large, deep skillet or Dutch oven, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
Frying the Fritters
Fry the Fritters: Using a large spoon or an ice cream scoop, carefully drop 1/4 cup portions of batter into the hot oil. Fry the fritters in batches, making sure not to overcrowd the pan. Fry until golden brown and cooked through, about 3-4 minutes per side.
Drain: Use a slotted spoon to transfer the fritters to a wire rack set over a baking sheet to drain excess oil.
Making the Glaze
Mix the Glaze: In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Glaze the Fritters: While the fritters are still warm, dip them into the glaze or drizzle the glaze over them using a spoon. Allow the glaze to set for a few minutes before serving.
