Beef Tips with Mushroom Gravy

INGREDIENTS:

1 1/2 lbs beef sirloin tips, cut into bite-sized pieces

Salt and pepper, to taste

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

8 oz mushrooms, sliced

2 tablespoons all-purpose flour

2 cups beef broth

1/2 cup heavy cream

1 teaspoon Worcestershire sauce

Chopped fresh parsley, for garnish (optional)

DIRECTIONS:

Season the beef tips with salt and pepper to taste.

Heat the olive oil in a large skillet over medium-high heat. Add the beef tips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and sliced mushrooms, and cook for an additional 4-5 minutes, or until the mushrooms are browned and tender.

Sprinkle the flour over the mushroom mixture and stir to combine. Cook for 1-2 minutes to cook off the raw flour taste.

Gradually pour in the beef broth, stirring constantly to prevent lumps from forming. Bring the mixture to a simmer and cook until thickened, about 5 minutes.

Stir in the heavy cream and Worcestershire sauce. Return the beef tips to the skillet and simmer for an additional 5-7 minutes, or until the beef is heated through and the sauce has thickened.

Garnish with chopped fresh parsley, if desired, and serve hot over mashed potatoes, rice, or noodles.
