Beef Roast Pot
Move over pot roast, there’s a new sheriff in town – and its name is beef roast pot! This easy recipe is perfect for a lazy Sunday dinner, and it only takes about 15 minutes to prep, the beef roast pot tastes delicious whether you eat it hot or cold, so it’s great for meal prepping too.
INGREDIENTS:
3-4 lb. Beef roast
2 tsp. Salt
1 tsp. Pepper
2 Tbsp. Olive oil
6 tsp. Minced garlic
1 C. Red cooking wine
2 C. Beef broth
¼ C. Worcestershire sauce
1 lb. Baby carrots
1 lb. Red potatoes , cut into large pieces
2 Onions , large, cut into wedges
DIRECTIONS:
Preheat the oven to 350 degrees.
Heat the olive oil in a large skillet over medium high heat on the stove.
Season the roast with the salt and pepper, and sear on all sides in the heated skillet.
Place the roast in the center of a large baking or roasting dish.
Surround the roast with the vegetables.
In the same skillet over medium heat, add the garlic to the remaining oil.
Saute for 30 seconds.
Whisk in the wine, beef broth and worcestershire sauce. Stir to combine and bring to a light boil.
Pour the sauce mixture over the roast and vegetables in the dish, and bake for 3 hours. If using a roasting dish, place the lid on top, if using a baking dish, seal it tightly closed with aluminum foil.
