Baked Ziti with Shrimp
INGREDIENTS:
8 oz. Ziti noodles cooked to your liking
½ C. Hot water
8 oz. Cream cheese softened
12 oz. Jar of roasted red peppers drained and chopped
1 Tbsp. Olive oil
8 oz. Shrimp peeled, deveined and cut into pieces
8 oz. Bay scallops
⅛ tsp Salt
4 tsp. Minced garlic
1 Tbsp. Chopped fresh parsley
¾ C. Shredded mozzarella cheese
DIRECTIONS:
Preheat the oven to 400 degrees.
In a blender or food processor, pulse together the hot water, cream cheese and roasted red peppers until a smooth sauce has formed.
Heat the olive oil in a large skillet over medium high heat.
Add the shrimp, scallops, garlic and salt to the skillet and saute until cooked through. Drain any excess liquid.
Reduce the heat to medium low and add the sauce to the skillet with the shrimp mixture. Simmer for 5 minutes.
Stir in the ziti noodles and parsley. Toss to combine well.
Pour the mixture into a well greased 9×9 baking dish and sprinkle with the mozzarella cheese.
Bake for 20 minutes.
