Baked Sweet Hawaiian Chicken
Who doesn’t love a good chicken dish? This baked sweet Hawaiian chicken recipe is simple to follow and the perfect weeknight meal. The chicken is coated in a delicious sauce made with pineapple juice, soy sauce, honey, and garlic, then baked until cooked through. Serve over rice or pasta for a delicious and easy dinner!

INGREDIENTS:

Chicken:

3-4 Chicken breasts boneless and skinless cut into chunks

4 eggs beaten

1 cup Corn starch

1 cup Canola oil

Sauce:

1 cup Pineapple Juice

1 ⁄2 cup light Brown sugar

1 ⁄4 cup Soy sauce

1 tsp minced Garlic

1 tbsp. Crushed red peppers

1 tsp.

1 tbsp. Corn starch

1 Red pepper chopped

1 can of Pineapple tidbits drained

DIRECTIONS:

Preheat the oven to 325 degrees
Cut your chicken into chunks and season with salt and pepper
Using 2 small bowls add corn starch into one of them and beaten eggs in the other.
Prepare a baking tray with foil or parchment paper.
Dip the chicken into the cornstarch first then into beaten eggs.
Make sure all sides are coated.
Place the chicken on the baking tray to the side.
Repeat with all of the chicken.
In a large skillet over medium to high heat add your oil.
Cook the chicken until golden brown.
Spray a baking dish with non-stick baking spray.
Add your cooked chicken to the baking dish.
In a large bowl add your pineapple juice, brown sugar, spy sauce, minced garlic, and cornstarch.
Mix until combined.
Add the chopped red peppers and pineapple tidbits to the pineapple sauce. Toss to combine.
Pour the pineapple mixture on top of the chicken.
Bake for 1 hour.
