Bacon Wrapped Pickles

INGREDIENTS:

5 Large whole dill pickles
5 oz. Cream cheese softened
1 C. Cheddar cheese shredded
2 Tbsp. Fresh chives chopped
2 Tbsp. Fresh parsley chopped
Red pepper flakes to tasteoptional
10 Thick cut bacon slices

DIRECTIONS:

Preheat the oven to 400 degrees.
Cut each pickle in half, and use a small spoon to scoop out a portion of the center of each pickle half.
In a mixing bowl, combine the cream cheese, cheddar cheese, chives, parsley and red pepper flakes if desired. Stir to combine the mixture well.
Fill the hollowed out center of each pickle with the cheese mixture.
Wrap a slice of bacon around each pickle half.
Bake for 20-25 minutes. Let cool slightly before serving.
