Apple Fritters
Everyone needs that one easy apple fritters recipe that takes little time and produces tasty results. This one requires less than a 20-minute time investment, which makes it ideal for Saturday morning breakfasts. This recipe offers many variations on the apple fritter theme, so one recipe goes a long way. I can easily create a variation of these fritters suitable for diabetic family members, so they don’t miss out.
INGREDIENTS:
3 C. All purpose flour
1 ½ C. Granulated sugar
1 Tbsp. Baking powder
1 tsp. Apple pie spice
Pinch of salt
1 C. Milk
2 Large eggs
2 tsp. Vanilla extract
1 ⅔ C. Peeled and finely chopped apples
2 Tbsp. Melted butter unsalted
Oil for frying
DIRECTIONS:
Place a few inches of oil in a deep-sided skillet or pot over medium-high heat on the stove, and heat the oil to about 350 degrees.
In a mixing bowl, combine all of the ingredients except the butter, apple pie spice, and apples.
Blend on high until a smooth batter is formed.
Add in the butter and blend again to combine.
Fold in the apples and apple pie spice until well incorporated.
Place ⅓ – ½ cup of the batter into the heated oil, and press it down flat with a metal spatula or cooking spoon. Allow it to brown on one side and then flip it over to brown and puff up on the other. Remove and drain on a paper towel-lined rack.
Repeat with the remaining batter and garnish with a sprinkling of confectioners sugar before serving if desired.
