Amazing Cheesy Enchilada Meatballs
This Cheesy Enchilada Meatballs Recipe is a real crowd-pleaser – and for good reason! Not only do they taste amazing, they’re also incredibly easy to make.

INGREDIENTS:

For the meatballs:

2 Tbsp. Taco seasoning

1 lb. Ground beef

½ tsp. Onion powder

1 Large egg

½ tsp. Salt

¼ C. Shredded cheddar cheese

¼ tsp. Black pepper

For the casserole:

¾ C. Shredded Mexican blend cheese

The cooked meatballs above

10 oz. Can Red enchilada sauce

DIRECTIONS:

Heat the oven to 400 degrees.
Knead together all of the ingredients for the meatballs in a large mixing bowl until well combined.
Form the mixture into evenly sized meatballs, and place onto a parchment lined baking sheet.
Baked for 25 minutes
Reduce the oven temperature to 350 degrees.
Spread ¼ of the enchilada sauce over the bottom of an oven-proof skillet.
Add the meatballs to the skillet, and top with the remaining enchilada sauce.
Sprinkle with the Mexican blend cheese.
Bake for 15 minutes.
